But eating the same leafy greens the same way day in and day out can be tedious and quite frankly, the biggest hurdle for me when it comes to my diet. I love variety and new things in what I cook and eat. As summer gets ever closer, most of us want to put our best foot forward. For those of us who have gotten bored of the regular bowl of lettuce, here are a few summer salad ideas that can help you stick to your diet.</span></p>

<h2><span style="font-weight: 400;">Thai Cucumber Salad</span></h2>
<p><span style="font-weight: 400;">This light and fresh Thai salad is a great companion to any Thai (or Asian food &#8212; I like it paired with some fried rice or some miso soup) dish and will help to keep you from overindulging on the more substantial main course. The cucumber ribbons are dressed with a ginger dressing that you can mix up and use for any kind of Thai salad you want to mix up. This salad makes between two and four servings, depending on your preference.</span></p>
<p>&nbsp;</p>
<ul>
<li style="font-weight: 400;"><span style="font-weight: 400;">One large cucumber</span></li>
<li style="font-weight: 400;"><span style="font-weight: 400;">2 tsp Toasted sesame seeds</span></li>
<li style="font-weight: 400;"><span style="font-weight: 400;">Red pepper flakes to taste</span></li>
<li style="font-weight: 400;"><span style="font-weight: 400;">1 tsp fresh cilantro or parsley</span></li>
<li style="font-weight: 400;"><span style="font-weight: 400;">1 small 1-inch cube of ginger, peeled and chopped</span></li>
<li style="font-weight: 400;"><span style="font-weight: 400;">1 lime, juiced and zested</span></li>
<li style="font-weight: 400;"><span style="font-weight: 400;">1 tsp sesame oil </span></li>
<li style="font-weight: 400;"><span style="font-weight: 400;">2 Tbsp of EVOO</span></li>
<li style="font-weight: 400;"><span style="font-weight: 400;">1 Tbsp soy sauce or tamari</span></li>

<p>&nbsp;</p>
<p><span style="font-weight: 400;">Make the dressing by combining the ginger, lime zest, and juice, sesame oil, EVOO and soy sauce in a bowl. Whisk together until emulsified. Set to the side. Use a vegetable peeler and make long noodle-like pieces of the cucumber. In a medium-sized bowl, add the sesame seeds, red pepper flakes, and cilantro. Pour the dressing over the cucumbers and mix until all the pieces are covered. Cover the bowl and let marinate in the fridge for an hour or two before serving.</span></p>

<p><span style="font-weight: 400;">One of my friends made this at a cookout, and it was amazing! The avocado adds some good fats to the salad and the fresh corn off the cob is an excellent addition. You can even jazz it up by adding shredded chicken or bbq shrimp to it to make it a full meal. This salad serves four and holds well in the refrigerator for about 3 days.</span></p>
<p>&nbsp;</p>
<ul>
<li style="font-weight: 400;"><span style="font-weight: 400;">1 cup of steamed OR grilled corn cut from the cob, about 1 ear</span></li>
<li style="font-weight: 400;"><span style="font-weight: 400;">1 medium diced avocado</span></li>
<li style="font-weight: 400;"><span style="font-weight: 400;">1 ½ cup sliced cucumber</span></li>
<li style="font-weight: 400;"><span style="font-weight: 400;">1 cup halved cherry tomatoes</span></li>
<li style="font-weight: 400;"><span style="font-weight: 400;">2 Tbsp diced red onions</span></li>
<li style="font-weight: 400;"><span style="font-weight: 400;">2 tsp EVOO</span></li>
<li style="font-weight: 400;"><span style="font-weight: 400;">Juice from 1 medium lemon</span></li>
<li style="font-weight: 400;"><span style="font-weight: 400;">Salt and pepper to taste</span></li>
</ul>

<p><span style="font-weight: 400;">Add all the vegetables to a medium-sized bowl. In a small bowl or glass measuring cup, add the EVOO, lemon juice, and salt and pepper. Stir with a fork until emulsified. Pour the dressing over the vegetables and stir. You can serve immediately or chilled. Enjoy!</span></p>

<h2><span style="font-weight: 400;">Rainbow Fruit Salad</span></h2>
<p><span style="font-weight: 400;">There’s a little produce stand just around the corner from my house. Every once in a while we go by and pick up some fresh berries and peaches. I can’t help it, you can smell the peaches before you can even get to the stand window. I may have scouted this recipe from the internet after I went a little hog wild, buying a large bag full of fresh berries and a few peaches for good measure. This recipe makes a beautiful salad that you and your family can enjoy for a few days, but trust me, it won’t last that long. It makes roughly six servings, or four if you have a bit of a sweet tooth as I do.</span></p>
<p>&nbsp;</p>
<p><span style="font-weight: 400;">To make the dressing:</span></p>
<ul>
<li style="font-weight: 400;"><span style="font-weight: 400;">2 Tbsp honey</span></li>
<li style="font-weight: 400;"><span style="font-weight: 400;">1 tsp orange zest</span></li>
<li style="font-weight: 400;"><span style="font-weight: 400;">1 tsp lime zest</span></li>
<li style="font-weight: 400;"><span style="font-weight: 400;">2 Tbsp freshly squeezed orange juice</span></li>
<li style="font-weight: 400;"><span style="font-weight: 400;">½ Tbsp fresh-squeezed lime juice</span></li>
</ul>
<p><span style="font-weight: 400;">Simply mix all of the ingredients in a small bowl and whisk until combined. It’s best if used right away.</span></p>

<p><span style="font-weight: 400;">To make the salad:</span></p>
<ul>
<li style="font-weight: 400;"><span style="font-weight: 400;">1 small pineapple, cored and diced</span></li>
<li style="font-weight: 400;"><span style="font-weight: 400;">1 mango, peeled and cubed</span></li>
<li style="font-weight: 400;"><span style="font-weight: 400;">1 peach, pitted and cubed</span></li>
<li style="font-weight: 400;"><span style="font-weight: 400;">1 nectarine, cubed</span></li>
<li style="font-weight: 400;"><span style="font-weight: 400;">½ lb strawberries, hulled and halved</span></li>
<li style="font-weight: 400;"><span style="font-weight: 400;">About 11 oz of fresh blueberries</span></li>
<li style="font-weight: 400;"><span style="font-weight: 400;">Citrus-Honey dressing</span></li>
<li style="font-weight: 400;"><span style="font-weight: 400;">1 Tbsp fresh mint leaves, julienned</span></li>
</ul>
<p><span style="font-weight: 400;">Add all of the fruit into a medium to large sized bowl. Store in the fridge to chill. Stir in the dressing and the mint right before serving, as the dressing will soften the fruit and make it release their juices. Serve as a refreshing side dish or as a lovely dessert on a hot summer day!</span></p>

While I don’t play hostess all the time, I do enjoy having people come over, as it’s become more and more challenging to get out with three kids. This means I usually have a few recipes up my sleeve when another event comes up and I want to seriously impress. Pull out a pen and jot down some of these fantastic summertime drink recipes to pull out when you want to be the most envied host on your street.</span></p>

<h2><span style="font-weight: 400">Try something fruity with a Hawaiian Mai Tai</span></h2>
<p><span style="font-weight: 400">Pineapple juice is one of my favorite mixers for drinks and in the summer there’s nothing better than a mai tai. It’s so fruity and refreshing that you’ll want to have some mixed up for any get togethers you may be planning for the future. The sweet pineapple and syrup are an excellent complement to the tang of the lime that you’ll feel like the cool breeze of the ocean is following you everywhere. This recipe will make enough for 6 total cocktails and fit nicely into a pitcher. Just pour them over some ice in your favorite tropical glasses and enjoy.</span></p>
<p>&nbsp;</p>
<h3><span style="font-weight: 400">Ingredients for the Hawaiian Mai Tai</span></h3>
<p><span style="font-weight: 400">1 ½ cup pineapple juice</span></p>
<p><span style="font-weight: 400">1 cup white rum</span></p>
<p><span style="font-weight: 400">Juice from 5 or 6 limes (about ½ cup lime juice)</span></p>
<p><span style="font-weight: 400">¼ cup orange curacao</span></p>
<p><span style="font-weight: 400">¼ cup simple syrup</span></p>
<p><span style="font-weight: 400">2 Tbsp maraschino cherry juice</span></p>
<p><span style="font-weight: 400">Pineapple slices (optional)</span></p>
<p><span style="font-weight: 400">Cherries (optional)</span></p>
<p><span style="font-weight: 400">Mint sprigs (optional)</span></p>

<p><span style="font-weight: 400">When you have an evening of entertaining outside, I love to set out my long table, decorate it with fresh cut flowers and fairy lights and a ton of friends. Sitting under the stars and eating a meal that we all helped to bring together is magical. My top choice is always my frozen two-tone wine coolers, and they’re always gone in a hurry. The two flavors are classic strawberry and sweet peach. Offer your guests some fun straw (we have crazy straws, and everyone loves it!) and let them relax in the early evening with some gossip and friends. This recipe makes a blender full of four servings.</span></p>

<h3><span style="font-weight: 400">Ingredients for the Frozen Two-Tone Wine Coolers</span></h3>
<p><span style="font-weight: 400">1 bottle of your favorite white wine (not too sweet, you’ll be adding the blended fruit</span></p>

<p><span style="font-weight: 400">1 cup of frozen strawberries</span></p>
<p><span style="font-weight: 400">3 cups of ice</span></p>

<p><span style="font-weight: 400">With a blender, blend 2 cups of white wine, 2 cups of frozen peaches, and 2 cups of ice to a smoothie consistency. Pour into 4 glasses. Blend 1 cup of wine, 1 cup of strawberries, and 1 cup of ice to the same consistency and top the other mixture. Serve immediately.</span></p>

<h2><span style="font-weight: 400">Keep it light with a Rose Petal Sangria</span></h2>
<p><span style="font-weight: 400">When the days get longer, my friends and I will find any excuse to get some free time together. With our busy schedules, it seems that the best way to do that is to meet up for brunch when they have the day off and I’m thankfully relieved of the kids by my partner. We meet up at my best friend’s place. Her sangria was a showstopper. She’s got the greenest of thumbs and offers up a few roses from her ever-growing rose bush. Make sure that you use fresh roses that haven’t been treated with pesticides or food grade dried petals from a store. </span></p>
<p>&nbsp;</p>
<h3><span style="font-weight: 400">Ingredients for the Rose Petal Sangria</span></h3>
<p><span style="font-weight: 400">1 bottle of your favorite Rose wine</span></p>
<p><span style="font-weight: 400">¼– ⅓ cup Rose petal simple syrup (instructions below)</span></p>
<p><span style="font-weight: 400">¼ –⅓ cup St. Germaine Liquor</span></p>
<p><span style="font-weight: 400">1–2 Tbsp fresh wild rose petals (washed) for garnish</span></p>
<p><span style="font-weight: 400">Fresh mint leaves for garnish ( optional)</span></p>
<p>&nbsp;</p>
<h3><span style="font-weight: 400">Ingredients for the Rose Petal Simple Syrup</span></h3>
<p><span style="font-weight: 400">1/3 cup dried petals or 1 cup of fresh rose petals</span></p>
<p><span style="font-weight: 400">1 cup granulated sugar</span></p>
<p><span style="font-weight: 400">1 cup water</span></p>
<p><span style="font-weight: 400">1 tsp lemon juice</span></p>
<p>&nbsp;</p>
<p><span style="font-weight: 400">To make the rose petal simple syrup: bring all the ingredients to a boil, stirring until the sugar is dissolved. Turn off heat and leave the syrup to steep overnight, or at least 10 hours. Strain and store in an airtight bottle.</span></p>
<p>&nbsp;</p>
<p><span style="font-weight: 400">To make the sangria: place all ingredients in a pitcher, stirring lightly as to keep from bruising the petals. Place in the fridge and serve over ice.</span></p>

<p><span style="font-weight: 400">My partner and I host games nights at least twice a month. We’re always on the look-out for something to make our gatherings fun. These root beer creams will remind you of your favorite ice cream float and bring a light, fun atmosphere to your gathering. Just make each in your favorite small glass and gather around the table with your dice! I’m giving you the recipe by the glass, as you would with a regular root beer float.</span></p>

Everyone asks me to make my chicken skillet with cream sauce. It’s so delicious and is packed with tomatoes, spinach, and herbs. Whether you have a date night or another special occasion coming up, this will be an excellent option for you. This dish is incredibly versatile, pairing well with a range of side dishes. I vote green beans or asparagus and some buttered noodles to toss the chicken and sauce on. </span></p>

<p><span style="font-weight: 400;">I attempted this recipe the first time during a girls’ night in with my best friends. It was still a spectacular hit, and we drank wine and chatted over the plates for hours. This is definitely one of those meals that will bring everyone from far and wide to your table. Isn’t that what a good recipe should be about? This recipe is deceptively easy and amazingly flavorful. Just make sure not to get too impatient and to let the cheese in the sauce melt, or it’ll be turn out loose and thin. It’s the most challenging part of the whole cooking process! Even if you just want to add a few new recipes to your repertoire, this is one I recommend trying at least once.</span></p>
<p><span style="font-weight: 400;">The first question everyone always asks me when I share the recipe is if they can make it dairy free. My answer is always a resounding YES! If you prefer a dairy-free option, you can substitute the heavy cream for any other kind of milk variant that you’d like. I prefer almond milk, as I usually have a carton on hand. My best friend prefers cashew milk and her sister prefers rice milk. (Lactose intolerance runs in her family, so I have to know all the trade secrets.) Just remember that if you do, it may take a little longer for the lovely cream sauce to thicken. The other option is to add a cornstarch slurry to the mix. Just a heads up!</span></p>

<p><span style="font-weight: 400;">¾ cup heavy cream</span></p>

<h2><span style="font-weight: 400;">Directions:</span></h2>
<ol>
<li style="font-weight: 400;"><span style="font-weight: 400;">Season the pounded chicken breasts with the garlic powder, onion powder, salt and pepper, parsley, thyme, and rosemary. </span></li>
<li style="font-weight: 400;"><span style="font-weight: 400;">In a large skillet, melt 2 Tbsp of butter over medium-high heat. Once melted, add the chicken breasts. Cook for 5 minutes on each side, until golden brown and the juices run clear. Remove the chicken from the skillet and set to the side.</span></li>
<li style="font-weight: 400;"><span style="font-weight: 400;">Add the 2 remaining Tbsp of butter to the pan and adjust the temp to medium heat. Once melted, add the shallot, garlic, and tomatoes. Saute until the tomatoes begin to soften and release their juices, around 5 minutes.</span></li>
<li style="font-weight: 400;"><span style="font-weight: 400;">Stir in stock, cream, and parmesan cheese. If you need to add the slurry, do so now. Stir until the cheese is melted.</span></li>
<li style="font-weight: 400;"><span style="font-weight: 400;">Add the spinach and let wilt. This will only take a minute or two. </span></li>
<li style="font-weight: 400;"><span style="font-weight: 400;">Return the chicken to the pan and cover with the sauce. Garnish with fresh parsley and parmesan cheese and enjoy.</span></li>

If you’re like me, routine means a renewed haphazard dash out the door first thing in the morning to get everyone where they need to go. On occasion, you realize too late that someone (usually you) didn’t get anything to eat for breakfast. That’s okay! I have your back with this fantastic and versatile Crockpot Overnight Oats recipe! I’ll even give you three of my favorite ways to prepare it so you can keep yourself and your family happy, fed, and on time for once.</span></p>

<h2><span style="font-weight: 400;">Crockpot Overnight Oats:</span></h2>
<p><span style="font-weight: 400;">These creamy oats are glorious in the morning. After slow cooking, while you sleep, you can get a little extra rest and a great breakfast. By adding almond or soymilk, you can increase the protein for your oatmeal, giving your family a little bit more of a boost.  This recipe makes 12 servings and can be kept in the fridge after it’s been cooled. While it is delicious cold, you can reheat it on the stove by adding a little more liquid &#8212; either milk or water, both will work. Yum!</span></p>
<p><span style="font-weight: 400;">3 cups of steel cut oats &#8212; they have to be the steel cut, not the instant oats or you’ll have mush on your hands</span></p>
<p><span style="font-weight: 400;">6 cups of your preferred dairy or non-dairy substitute (we use Unsweetened, Original almond milk if we want to add some extra protein)</span></p>
<p><span style="font-weight: 400;">8 cups of water</span></p>
<p><span style="font-weight: 400;">1 Tbsp of vanilla extract</span></p>
<p><span style="font-weight: 400;">2 tsp of salt</span></p>
<p><span style="font-weight: 400;">2 teaspoons of your favorite seasoning (we use classic cinnamon, but you’re welcome to add apple pie or pumpkin spice to it)</span></p>
<p><span style="font-weight: 400;">(optional) ¼ cup of your favorite sweetener (brown sugar or honey is my go-to)</span></p>
<p><span style="font-weight: 400;">Add all the ingredients to a 6-quart crockpot that’s been greased and stir. Set to low for 9 to 11 hours. Once it’s done, stir it up well and serve! You can add any of your favorite toppings to it, or you can follow some of my favorite recipes to mix it up a little.</span></p>

<h2><span style="font-weight: 400;">Peach Pie Bliss Overnight Oats:</span></h2>
<p><span style="font-weight: 400;">During the mixing of all the ingredients, add a can or two whole diced peaches and 2 teaspoons of nutmeg to the crock pot. You’re also welcome to make some of your favorites crumble to top it off when it’s done! Or opt for the lower calorie, but just as decadent whipped cream option. If you trick them into thinking that it’s unhealthy, they’ll eat more of it, right?</span></p>
<h2><span style="font-weight: 400;">Maple French Toast Overnight Oats:</span></h2>
<p><span style="font-weight: 400;">Again, go back to the combining of all the ingredients and add ⅛ cup of brown sugar and an ⅛ of a cup of maple syrup. Add also between a ¼ to a ½ a cup of raisins to the mix. Top at the end with toasted, chopped pecans. You might even want to toggle around with the measurements of the sweet things &#8211; if you don’t have much of a sweet tooth like I do, it might be a bit much. Less is definitely more here.</span></p>
<h2><span style="font-weight: 400;">Choco-Peanut Butter Overnight Oats:</span></h2>
<p><span style="font-weight: 400;">Depending on how much peanut butter you think is too much peanut butter, try it out by adding about a ½ a cup of your favorite peanut butter to the mix. You can even toss in a handful or two of peanuts. Eliminate half of the salt in the original recipe. When it’s all said and done, add some more peanuts to the top and a small sprinkling of mini chocolate chips for a garnish. Now enjoy! This is what we usually make as “birthday breakfast” in place of birthday pancakes. While it does have chocolate, you can add dark chocolate to help combat the added sugar and add in some much-needed antioxidants.</span></p>
<p><span style="font-weight: 400;">While none of your recipes have to be as decadent and high maintenance, these crockpot overnight oats are amazing. If you want to keep it healthier and cut the sugar, stick to fruits and nuts. This will help reduce all the extra nonsense and taste way better than those sugar-filled packets you can get at the store. These overnight oats will be the perfect base to build off of and to create your family’s new favorite breakfast.</span></p>

<p><span style="font-weight: 400;">This Gluten Free Vegan Maple Syrup</span> <span style="font-weight: 400;">Oatmeal Recipe is a wonderful breakfast to warm you up on a cold winter day (or in my opinion, any day of the week)! It’s also one of those great recipes that are not too different than a regular diet, so these kinds of recipes really help those people who are still transitioning to becoming a vegetarian or vegan&#8230;or gluten-free, etc. Or, if you’re ingredients aren’t gluten-free or vegan, you can still follow these instructions. The prep time for this maple syrup oatmeal is only 2 min. and the cooking time is only 8 minutes. This gluten free vegan maple syrup oatmeal recipe serves 1 tummy but feel free to make several servings at a time. Everyone loves this oatmeal and no one can tell that it’s vegan or gluten free!</span></p>

<p><span style="font-weight: 400;">To make this yummylicious gluten free oatmeal, combine the H20 and your gluten free oats in a small saucepan or small pot and then bring it to a boil. Reduce the heat and bring to a simmer and cook, without stirring, for another 3 to 4 minutes, until the rolled oats are slightly thick and a bit sticky.</span></p>
<p><span style="font-weight: 400;">Next, add in the dairy free milk, vegan maple syrup, ground cinnamon, and then cook for another 1 to 2 minutes, just until it is heated through and looks to be your desired thickness. Then, remove your oatmeal from the heat and pour it into a medium sized bowl. Serve right away with any toppings of your choosing. </span></p>

<h4><b>Instructions for this delicious ranch dressing recipe: </b><b> </b></h4>
<p><span style="font-weight: 400;">Use your food processor or a blender would work just as well, to combine all of your ingredients together. Then, process the ingredients until they are smooth. If you prefer a thinner dressing, you can try adding more vegan milk until you see it reach the perfect consistency for you. </span></p>
<p><span style="font-weight: 400;">Then serve on everything, haha.</span></p>
<p><span style="font-weight: 400;">You’ll want to refrigerate your vegan ranch dressing with avocado. Your leftovers should be good for a couple of days in the refrigerator. </span></p>
