<p><span style="font-weight: 400;">This Gluten Free Vegan Maple Syrup</span> <span style="font-weight: 400;">Oatmeal Recipe is a wonderful breakfast to warm you up on a cold winter day (or in my opinion, any day of the week)! It’s also one of those great recipes that are not too different than a regular diet, so these kinds of recipes really help those people who are still transitioning to becoming a vegetarian or vegan&#8230;or gluten-free, etc. Or, if you’re ingredients aren’t gluten-free or vegan, you can still follow these instructions. The prep time for this maple syrup oatmeal is only 2 min. and the cooking time is only 8 minutes. This gluten free vegan maple syrup oatmeal recipe serves 1 tummy but feel free to make several servings at a time. Everyone loves this oatmeal and no one can tell that it’s vegan or gluten free!</span></p>

Reduce the heat and bring to a simmer and cook, without stirring, for another 3 to 4 minutes, until the rolled oats are slightly thick and a bit sticky.</span></p>
<p><span style="font-weight: 400;">Next, add in the dairy free milk, vegan maple syrup, ground cinnamon, and then cook for another 1 to 2 minutes, just until it is heated through and looks to be your desired thickness. Then, remove your oatmeal from the heat and pour it into a medium sized bowl. Serve right away with any toppings of your choosing. </span></p>

<li style="font-weight: 400;"><span style="font-weight: 400;">1 tbsp. of cornstarch</span></li>
<li style="font-weight: 400;"><span style="font-weight: 400;">1-2  tbsp. of agave syrup </span></li>
<li style="font-weight: 400;"><span style="font-weight: 400;">1  tbsp. of lemon juice</span></li>
<li style="font-weight: 400;"><span style="font-weight: 400;">1 tbsp. of water</span></li>
</ul>
<h4><b>Instructions for the Gluten Free Vegan French Toast: </b><b> </b></h4>
<p><span style="font-weight: 400;">Ready for some delicious smelling aroma? Using a paring knife, make a slit down the side of your vanilla bean (lengthwise). Avoid cutting it in half, we just want to open it. Using your knife, scrape out the little seeds and put them in a shallow baking dish. Next, add your vegan milk, coconut milk, gluten free flour, maple syrup, arrow-root, pure vanilla extract, and your salt. Mix together until just combined.</span></p>
<p>&nbsp;</p>
<p><span style="font-weight: 400;">Preheat your oven to the lowest setting that you can. Get out a baking sheet, put a cooling rack on top of it and set aside.</span></p>
<p><span style="font-weight: 400;">Heat a large frying pan, over medium heat for 2 minutes. Use cooking oil to cover the pan’s surface generously. Start with 1-2 pieces of your gluten free bread (or however many will fit in your large frying pan, since we’re using gluten free bread, I’m guessing you can fit about 4 pieces, lol.). Pick up each slice of bread and dip it into your vegan milk mixture and let each soak for about 10-15 seconds, making sure both sides are saturated, if needed flip and soak each side.</span></p>
<p><span style="font-weight: 400;">Put your soaked slices of bread in the pan and cook for 3-4 minutes on each side or until both sides are golden and crispy. As each set of slices are ready, place them on the cooling rack on the baking sheet and place in the oven to keep warm while you finish with the rest of your vegan french toast. Make sure to re-oil the pan before every set of vegan french toast that you cook.</span></p>
<h4><b>Instructions for the Sweet Strawberry Sauce: </b><b> </b></h4>
<p><span style="font-weight: 400;">Mix together all of the strawberry sauce ingredients in a small pot and then bring to a boil. Then, turn down the heat to simmer, stir often for 3-5 minutes, until it has thickened. Remove the sauce from the heat and cover.</span></p>
<p><span style="font-weight: 400;">Slice your vegan french toast in half diagonal pieces. Lastly, place 4 halves of bread on a plate and then add a scoop of strawberry sauce and viola, vegan french toast!</span></p>
<p><span style="font-weight: 400;">*Add a dollop of vegan whipped cream if you’d like!</span></p>

2 C. Grated Zucchini<br />
1 Tbsp. Extra Virgin Coconut Oil<br />
1 Flax Egg (1 Tbsp. Ground Flax Meal + 3 Tbsp. Water)<br />
2/3 C. Almond Meal<br />
1/2 Tsp. Garlic Powder<br />
1/2 Tsp. Oregano<br />
1/2 Tsp. Parsley<br />
1/2 Tsp. Basil<br />
Crushed Black Pepper<br />
Red Pepper Flakes<br />
Coconut Oil Nonstick Cooking Spray</p>
<p><strong>Topping Ingredients:</strong> (Amounts can vary but here’s what I used)<br />
1/2 C. Almond Cheese (you can find this at a natural foods store like Whole Foods!)<br />
1/8 C. Spinach (handful)<br />
1/2 C. Arugala (handful)<br />
3-4 Grape Tomatoes, Sliced<br />
1/4 C. Extra Lean Ground Turkey, Cooked (I had it left over in the fridge. You can brown it in a skillet while the pizza cooks if you don’t have any on hand!)<br />
1/2 Avocado, Chopped<br />
*Makes 2 Servings!</p>

<p><strong>Directions</strong><br />
Preheat oven to 425.<br />
Line a baking sheet with parchment paper. Lightly spray with coconut oil nonstick cooking spray. (Note: if you spray too much oil, it will seep into the crust and the crust will be mushy)<br />
Take the grated zucchini and squeeze the moisture (water) out of it with your hands.<br />
Put the zucchini into a paper towel and give it another squeeze to make sure the water is really squeezed out.<br />
In a small bowl, prepare the flax egg by mixing 1 Tbsp. Ground Flax Meal + 3 Tbsp. Water. Stir the mixture and allow to sit for approximately 2 minutes, or until a gel is f<br />
Place drained, grated zucchini in a large bowl. Add coconut oil, flax egg, almond meal, garlic powder, oregano, parsley and basil.<br />
Use your hands to knead the crust ingredients into a dough.<br />
Place the dough onto the prepared baking sheet. Use your hands to press and flatten the dough into about a 1/4″ thick oval or rectangular shape.<br />
Set the crust into the oven on the bottom rack for about 30 minutes.<br />
After 30 minutes, remove crust and raise oven temperature to 475.<br />
Sprinkle the pizza crust with cheese and then continue adding the rest of the toppings.<br />
After oven is heated to 475, place pizza into the oven on the top rack.<br />
Let cook for approximately 5 minutes, or until cheese is melted and lightly browned.<br />
Remove from oven and let cool before cutting.<br />
Sprinkle with crushed black pepper and red pepper flakes and serve!</p>

<p><strong>My Yummy Spinach Smoothie Recipe!</strong></p>
<p>2 handfuls (maybe 3, I love this stuff!)</p>
<p>Almond Milk (a must!)</p>
<p>Strawberries</p>
<p>Banana</p>
<p>Pears</p>

<p>That&#8217;s it! I throw all of the above ingredients in my Bullet mixer and voila, I have the best snack ever! And I get a lot of greens in! You can mix and match fruit and veggies to find your favorite smoothie mix. My favorite part is mixing the pears and spinach together, it is delicious to say the least!</p>

<p style="text-align: center;"><strong>Although avocados are available at grocery stores pretty much year round now, their true season is from April to September with a very large amount of the country’s source being San Diego, in fact over 85% of the entire country’s avocados are hand grown in California! So as a true Californian, one should have a large repertoire of recipes at their disposal, especially for hosting your summer parties!</strong></p>
<p>This particular avocado recipe is great as an appetizer to a vegan meal, in my opinion because avocados are so filling and vegan meals aren’t always so satisfying for some, so this creates a nice balance. But this alluring fruit is so aesthetically fabulous that it will be the center of attention at any gathering.</p>

<p>I love cooking with avocados because of their versatile taste making eating healthy so enjoyable. Topped with juicy veggies like cherry tomatoes and cucumbers mixed with the tanginess tart of lemons create a mix of sensations for the senses.</p>
<p><b>Organic Ingredients for the Grilled Avocado Appetizer Recipe:</b></p>

<li>3 avocados halved, toss seed</li>
<li>1/3 cup sliced cherry tomatoes</li>
<li>¼ cup extra-virgin olive oil</li>
<li>½ cup gluten free quinoa</li>
<li>¼ cup cut orange segments</li>
<li>1/3 cup cucumber sliced, toss peel and seeds</li>
<li>1 smashed clove of garlic</li>
<li>¼ cup Italian parsley leaves</li>
<li>1 tbsp. champagne vinegar</li>
<li>2 tbsp. lemon juice</li>
<li>¼ cup mint leaves ripped by hand</li>
<li>Salt and pepper by preference</li>
</ul>

<p><b>DIRECTIONS:</b></p>
<p>Turn on your grill and preheat on medium.</p>
<p>In medium saucepan boil water. Add quinoa and cook for ten minutes or until tender. Drain and rinse with cold water in a fine colander. Let it sit and dry.</p>
<p>In a small glass bowl, mix lemon juice, vinegar, smashed garlic and salt together and let it sit for 45 minutes, stirring occasionally. Remove the garlic and add in olive oil and whisk to make oil.</p>
<p>Brush oil onto avocados and put avocados on the preheated grill, open side down cook until charred and take off grill.</p>
<p>Combine everything (except the avocado) in a medium bowl and toss to make avocado filling. Add salt and pepper to preference. Place avocado filling in halved avocado and arrange nicely and serve!</p>
